I was in south carolina at a pig picking and had a side of white rice and a spicy red sauce/gravy. i tried a recipe i found online that had, tomato paste, spicy V8, butter, garlic and onions but as soon as it heated up i could tell it was not right just from the smell. Any ideas?

Only thing that comes to mind is creole sauce. Its the seasoning that give it the distinctive taste.

Creole Sauce:
2 tbsp oil
4 oz onions, diced small
4 oz celery, diced small
2 oz green bell pepper, diced small
2 cloves garlic, minced
1 quart Tomato sauce or tomato puree
1 can (28 ounces) whole tomatoes, or fresh Creole tomatoes, cubed
1 bay leaf
1/2 tsp thyme leaves
Creole seasoning blend to taste;
OR
Salt to taste
Black pepper to taste
Cayenne pepper to taste

Saute onions, celery, green bell pepper, and the garlic in the oil until the onions are translucent.

Add the tomato sauce, bay leaf, thyme and Creole seasoning, bring to a boil, reduce heat immediately and simmer for 15 minutes. Remove bay leaf and adjust seasonings; if you’re not using Creole seasoning blend, season with salt, pepper and cayenne to taste.

Creole Seasoning Blend
1 T salt
1 1/2 t garlic powder
1 1/2 t onion powder
1 1/2 t paprika
1 1/4 t dried thyme
1 t red pepper
3/4 t black pepper
3/4 t dried oregano
1/2 t ground bay leaves
1/4 t chili powder

Combine all ingredients; store in an airtight container.

Use with seafood, chicken, beef, or vegetables.
Yield: 1/4 cup.
